Pot Roast and Veggies

Growing up this was a family favorite! There is nothing better than coming home from church on a Sunday and walking into the kitchen smelling a roast in the oven. The savory vegetables and beef along with the broth on a piece of bread always were a welcome taste.


Ingredients:

2-3 lb. Beckler Beef Chuck Roast

6 potatoes peeled and cubed

2 onions sliced

1 cup of baby carrots

2 tsp. of salt

1 tsp. of pepper

water to cover the roast (about 4-6 cups)



I cook this in my crockpot on low for 6-8 hours. the vegetables will be cooked completely and the meat will be very tender. The broth that is made is very flavorful and is enjoyed over bread.
